Yep, this dish uses instant potatoes. And my family loves them!
Garlicky Spinach-Potato Cakes
1 bag Idahoan Roast Garlic Instant Mashed Potato mix
1 egg
1/2 c fresh spinach, chopped
1 t baking powder
1/3 c all-purpose flour
pinch kosher salt
extra virgin olive oil or unsalted butter
Add potato mix to 2 c boiling water. Stir with fork. Remove from heat, cover, and let sit 5 min.
Combine remaining ingredients (except oil) with the potatoes.
Preheat a large nonstick pan over med-high heat. Heat 2-3 T olive oil or butter. Once hot, drop in potato mix – ~1/4c each per cake. Brown each on one side, then flip to brown the other side. Serve.
