Swiss Chard with Bacon
1 bunch Swiss chard, washed and gently dried
4 strips bacon, chopped
2 large cloves garlic, peeled and crushed
kosher salt
fresh cracked pepper
1/4 c Chicken Stock
zest of half a lemon
Take the chard leaves – trim out the woody stem and chop the stems in 1/2-in pieces. Set aside. Chop the leaves into 2-in pieces, and set aside separately from the stems.
Cook the bacon in a large nonstick pan. Take the bacon out with a slotted spoon and set aside. Add the garlic to the reserved bacon fat in the pan and cook until golden; remove the garlic and discard.
Add the chard stems to the pan with the reserved garlic-infused bacon fat and cook on high 2 min. Deglaze the pan with the stock. Add the Swiss chard leaves, season, and cook/toss for a couple minutes until all wilty and AWESOME! Then zest some lemon over, toss, and serve
Note: a great idea is to add some sliced mushrooms to this (see photo below) – just saute sliced mushrooms in unsalted butter until browned, and toss in at the end.
